I am a vegetarian and first considered becoming one due to the way meat is so poorly and dangerously prepared. The "outbreaks" of e.coli and othe meat- bourne illnesses has made me question if it Is worth it enjoyment of a hamburger. And then you consider the added hormones and sloppy practices at the slaughterhouses (from reading Fast Food Nation) - the realization of how frequntly the meat is splattered with sh*t... I guess im writing this to say that a true "thinking" person would not be so quick to assume that the choice to become a vegetarian is stictly driven by guilt. It is simply isn't the case. Guilt had nothing do to with my choice whatsoever. Lastly, I would encourage you to not "shame" readers for their "Ignorance". Express your opinion, sure, but please do not insult those who do not share it. That's just rude.

Some would argue that plants themselves are sentient. This is what the article discusses. Simply because they exist in a different way than animals doesn't necessarily make them more or less sentient.

Plant processing can produce high levels of pollution, especially when the plants are made into fake meat: like tofu or veggieburgers. And you can't tell me that the plants that are difficult to harvest (nuts, grapes, cocoa) are not energy intensive when you include their shipping costs and the human energy required to harvest.

I'm not being closed minded, I'm trying to get the vegetarians to stand up and provide evidence to the contrary. Defend your beliefs!

You overlook major points:

Plants are not sentient beings

Plant processing does not result in large-scale pollution

Human digestive systems are similar to those of herbivores, not carnivores. Colon cancer is high among meat eaters because our intestines are not desigened to quickly and efficeintly eliinate toxic waste that comes from eating flesh
